Rosie uses only organic produce as well as gluten-free meat and cheese

Every item is prepared 'from scratch'
(no mixes!) in her provincially licensed,
gluten-free kitchen environment, guaranteeing her customers the very
best of quality and food
safety. Her recipes have been developed and
tested with strict adherence to the Canadian
Celiac Association guidelines on preparation of
gluten-free food.
Chef Rosie's goal is to help her customers improve their lifestyle
and overall health through diet. She strives to create a personal
relationship with customers, and takes custom orders for products that
meet their individual needs and requirements.
Rosie's History
Born in a small village in the alps of Switzerland, Rosie was
raised with an appreciation for fresh-from-the-farm produce.
Responsible for food preparation from the time she was old enough to
lift a pot, Rosie prepared the family's meals using fresh garden
produce, farm milk, homemade cheeses.
Eventually, Chef Rosie found her way into rural New Brunswick,
Canada, where she opened a seasonal European-style restaurant on the popular Bay of Fundy tourism route.
She used
only organic produce, fresh garden herbs, free-range poultry and eggs,
organic locally raised meat, Bay of Fundy seafood, and homemade pasta
in her products, preparing each meal individually as it was ordered.
Responding to customer requests for her meals during the
off-season, she also opened a deli counter in a local farmer's
market.
One day, a customer commented that the food looked delicious, but
unfortunately, she could not sample it as she had Celiac disease and
required a gluten-free diet. This piqued Rosie's interest.
Rosie discovered, through research, that celiac disease affected
the digestive systems of an estimated one in every 133 Canadians, but
due to the wide range of symptoms including weight loss, fatigue,
diarrhea, many are not diagnosed properly.
She learned that celiac
disease was a gastrointestinal disorder characterized by intolerance
to gluten, the protein found in wheat, rye, barley and oat products,
as well as many processed foods available in today's market.
When people with celiac disease consume foods containing gluten,
tiny hair-like projections called villi, found on the lining of the
small intestine, become damaged. Over time, this damage prevents the
absorption of nutrients and eventually may lead to malnourishment or
other life-threatening disorders. There is no cure for celiac disease,
but it can be successfully treated with strict adherence to a
gluten-free diet.
Armed with this new awareness and knowledge, Rosie began to
experiment with her recipes in an attempt to convert them to
gluten-free without compromising taste.
Today, she operates the Chestnut Tree Bistro
in Riverview, New Brunswick - the area's first 100% gluten-free
restaurant.
Customers can also pre-order by phone for pickup at the
restaurant or have direct delivery to their door, anywhere
in North America.
Rosie's Gluten-free products are also available in
several retail outlets, senior care homes, and are served on a number
of international flights. Custom orders can be requested to meet individual
needs.
